Vanilla Fir honey is collected by bees from the honeydew produced by some microorganisms on the trunk of the black fir tree in the area of Mountainous Corinth!

 Another unique feature is that due to its low glucose content (below 30%) it never crystallizes, even after years. It is a unique honey in appearance that resembles something between caramel (pearl) and vanilla, with a creamy texture, fluidity & flavor!

The extraction of honey is extremely difficult and expensive because it requires the destruction of the honeycombs. For this reason, its production is very small and periodic throughout the years.
